Valentin Bianchi Cabernet Sauvignon

 WINEMAKER’S NOTES:

The grapes come primarily from the Asti and Doña Elsa Estate, situated in Rama Caíida, San Rafael, Mendoza, around 2500 ft. (760M) above sea level. It is an ideal climate for the Cabernet Sauvignon grape because of the warm days and cool nights that are typical of the area. The soil is of sandy calcareous composition and alluvial origins. Picked by hand, the grapes went through classic crushing and fermentation, with maceration on skins. The wine was aged for six months in French and American barrels, second and third use. The wine then underwent stabilization, filtering prior to bottling.

This Cabernet is red-purple in color offering aromas of cassis and berry with spicy notes. The palate is full and balanced with bursting berries, finishing with pleasing, soft berry-vanilla finish.
