Tangy, tomatoey sauce, chewy doughnut shaped pasta, seasoned beef, veal or cheese….the makings of a delicious tortellini dish. This stuffed pasta is a signature dish of the Italian region of Bologna, where they take tortellini very seriously! February 13th is National Tortellini Day! Whether you stuff your tortellini with meat or cheese, your red sauce screams for a Lambrusco. The light, flavorful, zesty and relatively low in alcohol wine is a perfect match for the high acid tomato sauce. Lambrusco can be dry, medium-dry or sweet, so read your label. Generally the higher the alcohol, the drier the wine. Lambrusco is a vastly underrated wine, found in most grocery stores, and can be very value oriented.
