TASTING NOTES:
Polished, vibrant and distinctive, our 2012 Project Paso Cabernet Sauvignon features an aromatic nose filled with blackberry, sweet leather and undertones of smokiness. Hints of Belgian milk chocolate, nutmeg and black pepper add complexity to the supple fruit prole. Black currants and fresh fig compromise the core of this rich wine, while mocha scented oak lingers throughout the wonderfully tannic finish. The mouth-watering acidity in the mid-palate will pair nicely with many cuisines.
FOOD PAIRINGS:
Enjoy with succulent braised short ribs, pan roasted veal chops with chanterelle mushrooms or lasagna with a hearty Bolognese sauce.
